Mediterranean Broiled Sole
Ingredients:
- 8 ounces sole fillets
- 1 egg white
- 2 tbspn lemon juice
- 1 chopped garlic clove
- 1/4 cup whole wheat bread crumbs
- 1/4 cup no-fat grated Parmesan cheese
Directions:
- Spray non-stick frying pan with PAM and heat at 400 degrees.
- Pour egg whites and lemon into a bowl and mix thoroughly.
- Place remaining ingredients except fish in another bowl and mix.
- Dip fish fillets in egg whites and then dip in bread crumb mixture.
- Place fillets in broiling pan and broil until lightly brown on each side.
- When finished, serve with salad and enjoy!
