Mediterranean Broiled Sole

Ingredients:
  • 8 ounces sole fillets
  • 1 egg white
  • 2 tbspn lemon juice
  • 1 chopped garlic clove
  • 1/4 cup whole wheat bread crumbs
  • 1/4 cup no-fat grated Parmesan cheese

Directions:

  • Spray non-stick frying pan with PAM and heat at 400 degrees.
  • Pour egg whites and lemon into a bowl and mix thoroughly.
  • Place remaining ingredients except fish in another bowl and mix.
  • Dip fish fillets in egg whites and then dip in bread crumb mixture.
  • Place fillets in broiling pan and broil until lightly brown on each side.
  • When finished, serve with salad and enjoy!
