Zucchini-Squash Salad

Ingredients:
  • 1 medium zucchini
  • 1 medium yellow squash
  • 2 tspns Dijon mustard
  • 1 tspn balsamic vinegar
  • 1/2 tspn crushed black pepper
  • 1 tspn light soy sauce

Directions:

  • Cut zucchini and squash into juliene strips and place in a large bowl.
  • Combine remaining ingredients in a mixing bowl and blend together until smooth.
  • Pour mixture over squash and zucchini.
  • Toss until evenly distrubeted and enjoy!
